私は常に料理には単なる食事以上の意味があると考えています。

それは、自然の恵みへの賞賛であり、生産者への感謝であり、先人から受け継いだ文化の表現であり、人と人を結びつける架け橋でもあります。一皿の料理の中に、大地とのつながり、歴史とのつながり、そして人々とのつながりが凝縮されていると感じています。

一皿一皿の料理に想いを込めて提供することで、お客様にこの「つながりの喜び」を感じていただきたいと思っています。

日本人のお客様には、「はな柳」の料理を通じて、改めて日本の伝統や食文化の素晴らしさを感じていただきたいと思います。忙しい日常の中で忘れがちな、私たちのルーツや誇りを思い出すきっかけになれば幸いです。

At Hanayagi, I believe that each dish is more than just a meal.
